DENOMINATION OF ORIGIN: Chianti D.O.C.G.
TERRITORY OF ORIGIN: San Gimignano, Montaione, Gambassi terme
HISTORY: Created for the first time in 2010 by Simon and Enrica Fornai (4th generation) the most challenging of our production conceived as a meditation wine.
HARVEST: Manually in the first ten days of October and in any case when the grapes have an optimum phenolic maturity.
GRAPES: 80% Sangiovese, 10% Canaiolo, 10% colorino.
VINIFICATION: In stainless steel tanks with fermentation on the skins for about 20 days, the optimal time for extraction with frequent pumping, the polyphenolic components, representatives of color and organoleptic quantity of wine.
AGING: Scrupulous control of malolactic fermentation in stainless steel tanks for 6 months and then left to ferment for a further 6 months in oak barrels of 25 hl finally bottled for the last 6 months in a dark place at a controlled temperature.
SERVING TEMPERATURE: 18°-19C
RECOMMENDED GLASS: Ballon of medium size.
COLOR: Deep purple Red.
TASTE: Elegant flavor with very soft tannins.
SMELL: Aroma of red fruit, spices well supported and light notes of vanillas conferred by the oak.

TOTAL ACIDITY: 5 mg/lt
GASTRONOMY: Our flagship wine is served in an excellent way with the Florentine steak, and in general with all the grilled red meats. Finally mates well with cheese.
