TERRITORY OF ORIGIN: Castelfiorentino, Florence zone
HISTORY: Created for the first time in 2002 by Cesare Fornai (3rd generation) to satisfy the needs of customers more and more turned on.
HARVEST: This wine is obtained from a few weeks early harvest of the grapes typical of Tuscan red with the addition of 10% ciliegiolo. The main feature of this wine is a maceration of 30% of the grapes.
GRAPES: 70% Sangiovese, 20% canaiolo, 10% ciliegiolo.
VINIFICATION: Fermentation at controlled temperature 18-20 ° for 4/5 days on the skins in stainless steel tanks.
MATURATION: Do not grow old, minimum aging for home use.
SERVING TEMPERATURE: 16-18°C
RECOMMENDED GLASS: Tulip of medium size.
COLOR: Intense Ruby Red.
ALCOHOL CONTENT: 12% volume
SUGAR: 4-5 mg/lt
TOTAL ACIDITY: 5,5 mg/lt
GASTRONOMY: It serves excellently with roast chestnuts, ground typically Tuscan appetizers, soups Tuscan Ribollita and vegetable soups.
