TERRITORY OF ORIGIN: Castelfiorentino
HISTORY: Created for the first time in 1990 by Ferruccio Fornai (2nd generation) following the Florentine tradition that required to farms producing wine to have a good product to dessert called “Vin Santo”.
HARVEST: Manually in the fourth week of October / first week of November. The late harvest favors in addition to the sugar concentration, a relatively high alcohol content, taste and flavor typical of vin santo.
GRAPES: 70% Malvasia, 30% Sancolombiano.
VINIFICATION: In wooden barrels of 100 Lt environment in the attic where there is the maximum temperature range.
MATURATION: 3-5 years in barrels, 1 year in bottle.
SERVING TEMPERATURE: 17°-18C
RECOMMENDED GLASS: Small tulip.
COLOR: Amber with golden highlights.
TASTE: We recognize aromas of dried fruit.
SMELL: They find themselves sensations of dried fruits accompanied by notes of honey.
ALCOHOL CONTENT: 15% volume
SUGAR: 4-5 mg/lt
TOTAL ACIDITY: 5,5 mg/lt
GASTRONOMY: This vinsanto is coupled in an optimum manner with the classic almond cantuccini and, in general, with all the sweets.
