DENOMINATION OF ORIGIN: Chianti D.O.C.G.
TERRITORY OF ORIGIN: San Gimignano, Montaione, Gambassi terme
HISTORY: Created by Ferruccio Fornai (2nd generation) in 1990 following the decision to move the sale of Chianti wine from bulk to bottled.
HARVEST: Manually in the first ten days of October and in any case when the grapes have an optimum phenolic maturity.
GRAPES: 80% Sangiovese, 10% Canaiolo, 5% colorino, 5% Trebbiano (As first disciplinary Chianti)
VINIFICATION: In stainless steel tanks with fermentation on the skins for about 20 days, the optimal time for extraction with frequent pumping, the polyphenolic components, representatives of color and organoleptic quantity of wine.
MATURATION: Scrupulous control of malolactic fermentation in stainless steel tanks for 6 months and then left to ferment for a further 6 months in bottle in a dark place at a controlled temperature.
SERVING TEMPERATURE: 18°C Recommended glass: Ballon of medium size.
COLOR: Deep purple Red.
TASTE: Smooth mellow flavor with sweet tannins, easy to drink.
SMELL: Bouquet of violet and red fruit, firm and penetrating.

TOTAL ACIDITY: 5 mg/lt
GASTRONOMY: This extraordinary wine joins in a good manner with enriched pasta dishes with sauces with game, grilled red meats and mature cheeses.
